The process of making caramel custard involves just few steps. Boil the milk, make the caramel, mix the custard, fill moulds and bake in bain-marie. The taste of this depends in the caramel which you make. If you cook the caramel for a long time the caramel might get bitter which in turn makes the custard bitter. 1. Start your pudding with cooked white rice . 2. Combine the cooked rice, sugar, and the milk or cream in a heavy saucepan over medium heat. 3. Cook, stirring often, until the liquid has reduced and the pudding has thickened. This should take about 20 minutes. 4. Stir in dried or fresh fruit, toasted nuts, or a dash of spice. Whole eggs and/or egg yolks are the most stable aerator. Sweetener, or a portion of the sweetener, is added and the mixture is warmed over a water bath to heat the eggs to safe temperature (140° F). Whisk the mixture constantly until it is pale and thick and all of the sugar is dissolved. Bring to a boil over medium heat and cook, stirring regularly, until agar-agar is melted. Add sugar and stir to dissolve. Continue to cook for about 10 to 15 minutes or until agar-agar is completely dissolved. Add 2 drops of pandan extract and stir to combine. Remove from heat and carefully pour into a flat dish. 5. Orange Fluff Jell-O Salad. Made with Jell-O, cool whip, and pudding, this is a dessert that even salad-hating kids will love. And mum will love it too, thanks to the addition of mandarin oranges, providing all those good antioxidants and vitamins. 6. Ingredients. 1/3 cup sugar. 2 tablespoons cornstarch. 1/8 teaspoon salt. 2 cups milk. 2 large egg yolks, slightly beaten. 2 tablespoons butter, softened. 2 teaspoons vanilla. Steps. 1. In 2-quart saucepan, mix sugar, cornstarch and salt. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and boils. Add the bloomed gelatin and stir until it's completely dissolved. Remove from the heat, and cool for 5 minutes. In a mixing bowl, combine the sugar/water/gelatin mixture, mango puree, and condensed milk. Whisk gently until the mixture is uniform (whisking too fast or vigorously will result in air bubbles). Mix well. Put the mold (llanera) on top of the stove and heat using low fire. Put-in the granulated sugar on the mold and mix thoroughly until the solid sugar turns into liquid (caramel) having a light brown color. Note: Sometimes it is hard to find a Llanera (Traditional flan mold) depending on your location.
